Taco Macaroni and Cheese

1 lb Macaroni or Shell pasta

1 lb. ground beef

1 onion, chopped

2 cloves garlic, minced

1 packet of taco seasoning

1 cup salsa

8 oz cream cheese (cut into chunks)

2 cups milk

1/2 cup sour cream

2 cups shredded Mexican cheese blend

 

1. Cook pasta, drain.

2. Brown ground beef and sweat the onion together in a large skillet over med-high heat. When the beef is cooked through, drain off excess fat. Add garlic to the meat and cook for 30 seconds. Add taco seasoning and salsa and stir to combine; reduce heat to low.

3. In a medium sauce pan over med-high heat, add cream cheese, milk, and sour cream. Stir to combine. cook until the cream cheese is melted and the mixture is thick and bubbling. Stir in the shredded cheese.

4. Add cheese sauce and ground beef to pasta, stir to combine. Top each serving with salsa and sour cream.

 

This was very good, but we would prefer it to be spicier. I made it to take to Adam’s parents and grandparents so I kept the spiciness at a minimum, but if I am making it for us, I would definitely kick it up a few notches!
